I eat this and wonder how I ever ate egg salad without avocado?
IT IS SO GOOD!
Even the hubs, who is not a giant avocado fan, gobbles this stuff down! Here’s what you need!

4 hardboiled eggs
1 ripe med avocado
dried onion flake
bacon pieces (not bacon bits! The real bacon pieces)
Dijon mustard
lemon juice
Red pepper flake
Mayonaise
salt and pepper
Directions
First, boil your eggs. In case you don’t know how to boil an egg….it’s eggs in water with a little vinegar added. Put over high heat, wait till it comes to a complete boil, then time it about 10 minutes. Remove from heat, add cold water to cool, and peel.
Now, I like to heat up my bacon so it has a fresher flavor and is crisper, but this is not a necessary step. I use about 1/4 C. bacon pieces and just crisp them up.
Cut your avocado in half by circling the pit. A note on avocados: when they are ripe and ready to eat, the are a bit soft. A firm avocado is not yet ripe. So if you are using an avocado the same day, buy a softer one. If it will be a few days before you use it, then buy a firmer one. A ripe avocado will release it’s pit easily.
Using a knife, score you avocado into cubes, then use a spoon to scoop the flesh out into a large bowl.
Add some onion flake. I just eyeball everything. This looks like about a tablespoon.
Also add a tablespoon of dijon mustard and a double splash of lemon juice, and use a fork to mash and mix it together.
It doesn’t have to be chunky, nor does it have to be smooth. Whatever you prefer.
Now roughly chop up the eggs and add them to the bowl as well.
Mix the egg in, then add the bacon pieces. Mix again.
Red pepper flake (about a teaspoon, or more if you like). Mix.
Now add a shake or two of salt and pepper and give it a taste to see if you need more of anything.
I leave the mayo for last because I want to add only as much as I need to. Add just enough to give it the creaminess that you prefer. I used about a tablespoon. Mix it well and eat with a spoon.
Just kidding!
Or not. Eat it with a spoon if you want to!
I like mine on toasted bread, but it’s fabulous in a wrap too!
I’ve tried it without bacon and it’s still good. Though, I do like the little crispiness the bacon gives. Enjoy! It’s amazing!










Okay, I like the egg salad part, but really thrown off about the avocado being included. I'm not an avocado fan though either so that may be the problem. Lol
