Banana Bread Oatmeal Cookies

When life hands you mushy bananas….you make banana bread! Well, I didn’t have enough for banana bread, so I decided to try out some cookies instead. Result: Amazing! These are super soft and taste like something grandma would make! Definitely a keeper! Here’s the recipe!

dry
2 C. flour
1 C. oatmeal (I had quick oats, but steel cut whole oats would be fine too)
1-1/2 tsp baking powder
1 tsp baking soda

1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
wet
1 egg
1/4 C. sugar
3/4 C. brown sugar
1/4 C. oil
1 C. bananas, overripe and mashed (about 2 bananas)
1 tsp vanilla

Directions

Preheat oven to 325°. Line two baking sheets with parchment paper and lightly grease. Combine flour, oatmeal, baking powder, baking soda, salt, and spices in large bowl. Set aside.

Using a mixer, mix the egg and sugars until smooth, about a minute. Add in the oil, bananas, and vanilla and mix until blended. On low speed, slowly add in the dry mixture and mix until completely combined. 

Drop by rounded teaspoon (or ice cream scoop like I use) onto baking sheets. These will spread a bit so make sure to leave plenty of room between them. 

Bake for 16-20 minutes, until lightly browned and they pass the toothpick test. It took about 18 minutes for me. 

Let sit on the sheet for 5 minutes before moving to cooling rack, and cool completely before storing.
These are super moist and delicious! Good luck not eating them all while they are still warm!

This makes about 1-1/2 dozen for the size I made. Enjoy!
