Slow Cooker Potato Soup

Potato soup is one of J’s favorites! He loved the potato soup my step-dad made, and he loved the potato soup he was served in a little restaurant in Germany. I use the slow cooker to make this super easy, but you could make it in a pot on the stove just as easily!

6-7 red potatoes, chopped
1 large onion, chopped
1/2 stalk of celery, chopped
1 cup half & half
2 chicken bouillon cubes (or vegetable bouillon to make this vegetarian friendly)
1/4 tsp cayenne pepper
2 T. salt (or more to taste)
1 T. pepper (or more to taste)

Directions:

Peel, rinse, and chop the potatoes, celery, and onion. I added a clove of garlic too. It’s not on the recipe, but J loves garlic so I pretty much add it to everything!

Dissolve the chicken bouillon in a cup of hot water, then add it, the half & half, and the vegetables to the slow cooker.

Now you add just enough water to cover the potatoes. For me, it was about 4-5 cups. 

Season with salt, pepper, and cayenne (and anything else you might want to add). Stir it around, then let it cook on low (or high if you want it done faster) until the potatoes are fork tenter. 

Once the potatoes are tender, use a potato masher to mash them into smaller pieces. The consistency of your soup is completely up to you. You can purée all of it and have a really velvety smooth soup, you can leave it totally chunky, or you can do what I do and have it at a slightly lumpy consistency. 
Note: Potatoes need a lot of salt! And the more you break them down, the more salt you will need! I ended up adding much more salt to my soup after the mashing and blending. Taste it– if it tastes bland or flat, add some more salt. 
For my soup, I ladled about half of it into a blender and set it to liquify! (Don’t overfill your blender!)

Then just pour the purée back into the slow cooker. This makes a nice creamy soup that still has some nice chunks in it!

Top with some shredded cheddar cheese, chives, and/or bacon pieces! Yum!

Since this recipe uses half & half, instead of cream, and only a cup of it, it’s a “better for you” potato soup! So have as much as you want! 🙂 This tends to taste better the second day, and it freezes well. It separated slightly when thawed, but a comes back together nicely once hot again.

As long as I stick to the recipe! 😉 I like the printable version too. 🙂 Normally when I try out one of your recipes, I'm looking up your blog and having to move the laptop to the kitchen so I don't have to run back and forth to read what the next measurement/step is. The printable recipe would be more convenient for me, but at the same time if I'm wanting to make it, I will make it regardless if I have it on a recipe card or if I'm moving the computer to the kitchen! So, do what's easiest for you! 🙂
