I love so many things about Fall! One of them is the Honeycrisp apple harvest! These apples are generally larger than most apples. I’ve seen them in the grocery store as big as a pugs head! Honeycrisps are sweet, crisp, and juicy…perfect for caramel apples or for baking, and you can only find them in the Fall! We have a fabulous Farmer’s Market here and were able to pick up some fresh picked Honeycrisps last weekend!

Another of my Fall favorites is warm desserts! Well, I love desserts in general. I think I got my sweet tooth from my grandma Archer! That lady always had dessert in the house! Always! Usually it was in the form of ice cream cups and push-ups…Schwans’s man goodies! I loved going to grandma’s for dinner…and dessert! Anyway…warm deserts— I love cobblers and crisps, and apple crisp is one of my absolute favorites! I came across a similar recipe a while back and I have been making my super easy version since! I love that it takes only 5 minutes, it’s single serving, and you probably already have all of the ingredients! So, without further ado…
Use a medium size apple…any one you like. I core it, peel the skin, then cut it into bite size pieces. Too large of pieces will not cook thoroughly. I use a little ramekin, but you can use any microwaveable bowl.
The topping consists of Quaker oats, brown sugar, and butter (or margarine) in a 1:1:1 ratio. So I used about 1&1/2 tablespoons of each. Then add just a splash of vanilla.
Then you can sprinkle the top with as much, or as little, cinnamon as you like. I like to cinnamon my apples too! 🙂
Use a fork to mix the oaks, sugar, and butter like you are making a crumble. This will be more like a paste because you need more butter to prevent the apples from drying out. Put the mixture on top of the apples.
Microwave on high for 1 minute. The bowl may be hot, so be careful!
The apples will be piping hot, tender, and perfectly sauced!
I love making this simple dessert! It tastes much more complicated than it actually is! And this would be so perfect with a scoop of vanilla ice cream! There are so many possibilities for variations too! You could add some cranberries, or use with peaches, blueberries, or huckleberries! Enjoy!
