Squash Gratin

A few months ago, a friend did me a kindness by sending over bag full of various summer squashes from her garden (Thanks Danielle!) Well the Mr. and I are were not big squash fans, so I wanted to find a recipe we would like, and that still would use up the squash. That is how I found this amazing Pattypan Squash Gratin recipe!

Y’all….this is a game changer! We were converted! We liked it so much, that we were craving it again! So I made it for dinner last night! 🙂

The first time we used pattypan, zucchini, and potatoes. Last night we just used pattypan and potatoes. Both were delicious!

I used Brie cheese both times in place of the gorgonzola, and regular breadcrumbs in place of panko. I think this will be a regular fall meal for us! I hope you try it, and I hope you love it!
