Well here I am day 3 into my Whole30 journey and as promised, I have an amazing substitution recipe for you!
It’s tough changing to a new way of eating when you have spent your whole life eating a different way! I’m not going to lie, the idea of giving up my Creamy French and Caesar salad dressings that are laced with sugar for a vinaigrette did not sound appealing at all! Until I made this dressing!
I had an extra bell pepper in the refrigerator that needed to be used so I thought I’d try to make a dressing with it. Results: AMAZING! I did not miss my French dressing at all! Definitely going to have to keep some peepers in the house for this one! Here’s how I did it!
Ingredients Print this recipe!
1 bell pepper (I used yellow, but orange and red would be fine)
1 clove garlic
1/3 C. Olive Oil (I used extra light olive oil. It has a lighter flavor than extra virgin. But use whatever you have)
2 T. apple cider vinegar
1 tsp. paprika
1/2 tsp. black pepper
1/2 tsp salt
Directions
Wash and deseed the bell pepper. Cut into a few chunks and spritz, or brush with olive oil. Place under the broiler on a baking sheet. Keep an eye on it. It will only take a few minutes for the edges to start to char. Remove it when the centers of the peppers begin to show color. It will be extremely hot so be careful!
Place the roasted peppers (no need to let them cool), the garlic, and spices in a food processor and pulse to a fine chop. Drizzle in the olive oil and vinegar while continuing to mix until it becomes liquified. Add more oil if it’s too thick.
Depending on the size of your pepper, this will make about a cup. You can store in a container in the refrigerator for up to a week!
It’s amazing with steak! Super savory and creamy! Enjoy! 🙂






I'll be honest here, I have never tried a Vinaigrette anything and am SUPER hesitant to….ALL because of the vinegar! Lol. Your food does look delicious though! 😉

Lol it doesn't taste like vinegar! This tastes like a french dressing with some bell pepper in it. Really good!

I may have to try it then. I've only had French dressing once, as a child, and wasn't a fan. Palate's change though. 😉
