Ok confession: not everything I cook is blog-worthy. That’s a term I use when I make a dish…I ask J, “Is this blog-worthy?” And he gives me is noncommittal shrug, and tells me it’s “ok”.
For the record, on this recipe he told me “no”!
But I’m posting it anyway because I want you to see that I cook like a normal person. One who puts some effort into it some days, and takes the easy way out on other days! Plus, this is one of my favorite childhood meals that my mom used to make, and it’s the best comfort food to me!
Ready? Ok here we go!
These are your ingredients!

Not kidding. My mom used to call this tuna noodle casserole! It’s sort of like a tuna helper. It’s just delicious and super duper easy! (and cheap!)
Make the mac-n-cheese according to box instructions.
Add the soup (no water) and the drained tuna.
Mix well and heat through.
Eat!
I was thinking the other day how “back in the day” parents used to just concoct stuff like this. They would combine random things and make something that you didn’t really know what to call it….except delicious!




Mmmmm! I haven't had this since I was a kid and Mom cooked it! And I'm actually sad that I forgot all about it! Thanks for the reminder! 🙂 One thing we used to have as kids was hot chocolate with the toast dunked in. I tried that recently, and as an adult, I was questioning how that was ever good to me. Lol. Apparently my taste buds have changed a little over the years. Lol.One of my favorite things that Mom cooked (not sure if from when we were little; I remember teenage years) is cubed steaks! I always make Scott cook them and he gets the breading almost just like hers. So good! 🙂 Another thing that I wish I could have that would taste just like hers is some fresh rainbow trout. Fish never tastes as good to me as it did then, but I actually crave that from my childhood. Oh, and I'm not sure if Mom or Jen actually started the boxed fried chicken, but I remember having that too and it doesn't even tatse the same as when they cooked it. Funny how that is.

I still like toast in hot chocolate, but I hardly ever do it! The boxed chicken started in Melrose! You may be too young to remember, but I remember. One box fed our family of 5! Could you imagine! One box would feed 3 now! ha ha! J really likes cube steaks. He calls them “minute steaks” and they are his go-to when he's dieting. I don't eat them much. I like thick steaks that you can cook to Med. Cubed steaks have only one gradient…DONE! lol! I'm glad so many people liked this post! I feel like the 80's cooking ingenuity is getting lost with all the gourmet foodie craze. Maybe I can bring some of it back! 😉
