Got Tortillas?

I am not very good at being Martha Stewart. Even though I really do aspire to be like a 1950’s housewife, I will never be baking and cleaning in a dress! I’m also not good at keeping my refrigerator stocked. I do often run out of milk, or ketchup, or mayo…for days, or even weeks! However, there are about 4 items that I never run out of and that are ALWAYS in my refrigerator: eggs, hot sauce, CHEESE, and flour tortillas! I love tortillas! I use them for everything! I make PB&J on a tortilla! If it can be put on a tortilla, I will do it! So in the future, I am certain that I will be sharing my many tortilla concoctions with you. Most of them are really simple, as I like my food to be fast and easy! Some are more complex, but we’ll get to those later. For now, black bean quesadillas! 

I love Mexican food, and love black beans over any other bean. This is a really easy, delicious, and fairly healthy meal/snack that you can make in minutes, and, if you are like me, you will already have everything on hand (I also stock cans of black beans 😉 ). 

So, super simple! You will need flour tortillas (I use the taco size so I can save some calories– smaller portions), a can of black beans, some Mexican or queso cheese, and seasoning or hot sauce to your liking. Drain and rinse the black beans, then place in a microwave safe bowl. Heat them up, 40-45 sec at a time, stirring after each increment, until they are heated through. Here, I put in some seasonings…a bit of cumin and chili powder, and a couple tablespoons of hot sauce (taco sauce. You can also just open a pouch of taco seasoning and add about half of that.) Mix it well. Using a large fry pan, spray the bottom with a cooking spray and lay one tortilla flat in there. Sprinkle the tortilla with cheese (about 1/4 cup) then layer half of the tortilla with beans. Fold over the other half like you would an omelet. You need to keep the heat at about medium so the tortilla won’t burn. Flip the tortilla back and forth to melt the cheese and brown both sides. You don’t need to spray cooking spray again…once is enough. When the cheese is melted, remove from the pan and enjoy! Did I mention how easy this was??
